During this year’s Superbowl Sunday we all wanted to get together for a game day potluck dinner. I’m not a cook, which is why I like to work with easy recipes. I chose to make a quick and delicious vegetarian tacos for the game day. All you need is Old El Paso taco shell, your choice of Old El Paso refried beans, vegetables and Avocados from Mexico. I bought all the items from my local Publix store with coupons from Ready Plan Save.
It was the simplest and most delicious dish I ever made. Everyone loved the fresh taste of the taco dish. I took the Old El Paso boxes and cans with me to the party and prepared the dishes for anyone who wanted to try the vegetarian taco.
How to make vegetarian soft tacos:
– Heat the Old El Paso tortillas in the microwave for 60 seconds.
– Heat the Old El Paso refried beans in a bowl in the microwave for 2 minutes. Make sure to cover the bowl to avoid any bean splatter.
– Cut & chop vegetables of your choice. I chose: Tomatoes, Lettuce, Bell Peppers, Onions & Avocados from Mexico.
– Spread one tablespoon of hot Old El Paso refried beans on a tortilla. Top it off with chopped lettuce, tomatoes, bell peppers, onions and couple of slices of avocados. Finish it off by sprinkling some shredded cheese on top.
Olé! It’s that simple!
